Matcha has never been more popular — or easier to fake. The words on the tin sound like guarantees; too often they aren’t. Here’s what separates the real thing from a bright green label, and why we built SHIZUNE around the honest answer.

Matcha’s popularity has grown faster than Japan can grow the leaf. True matcha begins with tencha — shade-grown leaves, slowly stone-milled — and there is only so much of it each harvest. When demand far outpaces supply, that gap is where shortcuts appear.

Most of what’s sold as “matcha” today is bright, green, and photogenic. But color alone tells you very little. The real story is in the leaf, the origin, and the maker — and those are exactly the things a label can hide.

Where the label stops telling the truth

The matcha aisle is full of confident words: ceremonial, Uji, stone-ground. Each one sounds like a guarantee. Too often, it isn’t. Here are three of the most common — and what they actually mean once you look closely.

1. “Ceremonial grade” is not the grade you think it is

Outside Japan, “ceremonial grade” has been flattened into a single marketing phrase — used, at best, to mean “for drinking rather than baking.” That’s it. It tells you the powder isn’t meant for cookies. It tells you almost nothing about quality.

Japan doesn’t work that way. Real matcha is judged on a strict, layered scale — leaf age, harvest timing, milling, finish. Two matcha can both be sold abroad as “ceremonial,” yet sit worlds apart: one a basic latte powder, the other a fine usucha made to be whisked and sipped on its own. Same word on the tin. Completely different tea. When one term is stretched to cover everything, it stops protecting the buyer — and starts protecting the seller.

2. The “Uji” math doesn’t add up

Uji is one of the most prestigious names in matcha — and one of the most borrowed. Here’s the uncomfortable part: the amount of authentic Uji-region matcha Japan actually produces each year is a small, finite figure. The amount of matcha sold around the world labeled “Uji” is dramatically larger.

Those two numbers cannot both be true. A respected region has quietly become a marketing word, printed on tins filled with powder grown somewhere else. If a famous origin is on the label, the real question isn’t “is it Uji?” — it’s “can they prove it?”

3. “Stone-ground” — possible to print, hard to mean

True stone milling is slow. A single granite mill produces only a tiny amount of matcha per hour, which is exactly why genuinely stone-ground matcha is expensive to make. So when a low-priced matcha proudly says “stone-ground” on the front, the math gets suspicious fast.

Either the volume and the price don’t match the method — or the word is being used loosely for something else. “Stone-ground” should signal care and cost. On a bargain tin, it more often signals a story that doesn’t hold up.

Origin isn’t about prestige — it’s about accountability. A named region means someone can stand behind the leaf: where it grew, who made it, and how.

When a matcha is tied to a real, single origin, there’s nowhere to hide a blend or a borrowed name. That’s why we treat origin not as a badge, but as a promise we have to keep with every harvest.

  • A named origin, not a borrowed name — Each matcha tied to a real region you can trace.
  • A maker who can answer — Someone who knows where the leaf came from, and will tell you.

Is real matcha worth it?

Real matcha costs more because real tencha, shade-grown and slowly milled, costs more to grow and make. But the difference isn’t only in the cup — it’s in knowing exactly what you’re drinking, and where it came from.

A smaller tin of honest matcha will almost always outlast and outperform a larger one cut with filler. You drink less, taste more, and trust what’s in the bowl. That’s the quiet math behind real matcha.

Frequently asked questions

Is some matcha fake?

“Fake” is strong — but yes, some matcha is diluted with cheaper green tea or fillers, and some is mislabeled by origin. It’s rarely obvious from a photo, which is why traceability matters more than color.

Does a famous region like “Uji” on the label guarantee quality?

No. Far more matcha is sold worldwide as “Uji” than the region could possibly produce — the numbers simply don’t add up. A region name only means something when the brand can trace the leaf back to it. Ask where it’s grown and who makes it; an honest maker will answer.

What does “ceremonial grade” really mean?

Outside Japan, it’s mostly used to mean “for drinking, not baking” — and nothing more. In Japan, drinking matcha spans a strict, layered scale, so two “ceremonial” matcha can be completely different teas. We grade honestly, by what’s actually in the bowl — every SHIZUNE matcha is made to be whisked and sipped on its own.

Isn’t all matcha “stone-ground”?

It shouldn’t be assumed. Real stone milling is slow and low-volume, which makes it genuinely expensive. When a cheap matcha claims it, the price and the method rarely match up — so the claim is worth questioning.
